Everyday Happy Herbivore by Lindsay S. Nixon | Vegan Cookbook Review by Mary's Test Kitchen
Everyday Happy Herbivore was released a couple years ago by Linday S Nixon of the popular blog, Happy Herbivore. Like the title implies, this book aims to provide "everyday" meals that you can make in 30 minutes or less. The cover promises "quick and easy, fat-free and low-fat vegan recipes." Overall, I think this book delivers! All the recipes I tried were easy, used fairly accessible ingredients and took less than a half hour to make. Don't expect super fancy, gourmet flavours here but healthy, solid dishes that will satisfy on a weekday night. At the same time, if you make a dish, I think you will find it's easy to kick the flavours up a notch with salt, sugar and fat of your choosing. The main drawback for me is that I could see where the flavours could improve with the addition of fat. You guys know I'm not afraid to use fat where I think it will actually make a difference to the enjoyment of the dish.However, this book being all about the "low fat," I can accept those compromises. :-) Also, this book has lots of vegan pantry basics that you can make from scratch including vegan mayo, salad dressings, spice mixes and even "beef" and "chicken" style bouillon. All low fat or no fat. This review was fairly limited as I only tried three dishes. I enourage you to check out other reviews to see if this book will be right for you.
